What&#8217;s behind the intrinsic aroma of grapes?<\/h2>\n<\/div><div class=\"fusion-text fusion-text-12\"><p><strong>The secret is in the aromatic compounds found in wine<\/strong>.<br \/>\nThere are three groups: <strong>primary, secondary and tertiary<\/strong>, which unite harmoniously with the terroir of the grape variety and the vinification and ageing techniques to give a characteristic aroma to each wine.<\/p>\n<\/div><div class=\"fusion-text fusion-text-13\"><p><strong>More than 220 aromatic compounds have been identified<\/strong> as contributing to the perfume of wine. These can be divided into four macro-groups, as we will show you here:<\/p>\n<\/div><\/div><\/div><div class=\"fusion-layout-column fusion_builder_column fusion-builder-column-4 fusion_builder_column_1_1 1_1 fusion-flex-column\" style=\"--awb-bg-size:cover;--awb-width-large:100%;--awb-margin-top-large:0px;--awb-spacing-right-large:1.92%;--awb-margin-bottom-large:20px;--awb-spacing-left-large:1.92%;--awb-width-medium:100%;--awb-spacing-right-medium:1.92%;--awb-spacing-left-medium:1.92%;--awb-width-small:100%;--awb-spacing-right-small:1.92%;--awb-spacing-left-small:1.92%;\"><div class=\"fusion-column-wrapper fusion-flex-justify-content-flex-start fusion-content-layout-column\"><div class=\"fusion-separator\" style=\"align-self: flex-start;margin-right:auto;margin-top:20px;margin-bottom:20px;width:100%;max-width:126px;\"><div class=\"fusion-separator-border sep-single sep-solid\" style=\"--awb-height:20px;--awb-amount:20px;--awb-sep-color:#be9e56;border-color:#be9e56;border-top-width:1px;\"><\/div><\/div><div class=\"fusion-text fusion-text-14\"><h4 style=\"text-align: left; font-size: 18px; line-height: 24px; color: #be9e56;\">Fruit aromas<\/h4>\n<p>These are the most easily recognised aromas of wine, perceived even by a tyro nose; among the various fruits we can list <strong>blackberry, blueberry and black currant, red berries such as strawberry, raspberry, red currant and cherry, citrus fruits<\/strong> such as lemon, <strong>orange and grapefruit<\/strong>, <strong>fruits with yellow flesh<\/strong> like peach and apricot, and <strong>white-fleshed fruit<\/strong> such as apple, pear and <strong>dried fruit.<\/strong><\/p>\n<\/div><div class=\"fusion-text fusion-text-15\"><p><strong>These fruit aromas are typical of younger wines<\/strong> and are found mostly in white, red, ros\u00e9 and passito wines. An example?<br \/>\nDistinct notes of black currant in <strong><a href=\"https:\/\/josettasaffirio.com\/en\/wines\/barbera-dalba-superiore\/\">Barbera d&#8217;Alba DOC<\/a><\/strong>, dried fruit and raspberry in <strong><a href=\"https:\/\/josettasaffirio.com\/en\/wines\/langhe-nebbiolo\/\">Langhe DOC Nebbiolo<\/a><\/strong>, peach and apricot in <a href=\"https:\/\/josettasaffirio.com\/en\/wines\/\"><strong>Moscato d&#8217;Asti DOC<\/strong>G<\/a>. .<\/p>\n<\/div><div class=\"fusion-separator\" style=\"align-self: flex-start;margin-right:auto;margin-top:20px;margin-bottom:20px;width:100%;max-width:126px;\"><div class=\"fusion-separator-border sep-single sep-solid\" style=\"--awb-height:20px;--awb-amount:20px;--awb-sep-color:#be9e56;border-color:#be9e56;border-top-width:1px;\"><\/div><\/div><div class=\"fusion-text fusion-text-16\"><h4 style=\"text-align: left; font-size: 18px; line-height: 24px; color: #be9e56;\">Spice and wood aromas<\/h4>\n<p>These are deeper and more intense notes, among the most fascinating to be found in wine. On the nose, these are perceived as sweet spices like <strong>cinnamon, vanilla and liquorice or zesty, more penetrating spices, such as pepper, clove and nutmeg as well as perfumes of coffee, cocoa and tobacco.<\/strong><\/p>\n<p>These aromas are often found in wines aged in barrels, for example: vanilla, liquorice, tobacco and cinnamon in <strong><a href=\"https:\/\/josettasaffirio.com\/en\/wines\/barolo-monforte\/\">Barolo DOCG<\/a><\/strong>, spices and cocoa in <a href=\"https:\/\/josettasaffirio.com\/en\/wines\/barolo-persiera\/\"><strong>Barolo DOCG Persiera.<\/strong><\/a><\/p>\n<\/div><div class=\"fusion-separator\" style=\"align-self: flex-start;margin-right:auto;margin-top:20px;margin-bottom:20px;width:100%;max-width:126px;\"><div class=\"fusion-separator-border sep-single sep-solid\" style=\"--awb-height:20px;--awb-amount:20px;--awb-sep-color:#be9e56;border-color:#be9e56;border-top-width:1px;\"><\/div><\/div><div class=\"fusion-text fusion-text-17\"><h4 style=\"text-align: left; font-size: 18px; line-height: 24px; color: #be9e56;\">Flowers aromas<\/h4>\n<p><span id=\"result_box\" class=\"\" lang=\"en\"><span class=\"\">A smelling nuance that is almost always present in wines, during the tasting it is possible to recognize the scent of flowers such as <strong>jasmine, orange blossom, rose, peony, lavender, <\/strong>but also fragrances to teas such as<strong> chamomile, linden, hawthorn, honey and<\/strong><\/span><strong> wax.<\/strong><\/span><strong><br \/>\n<\/strong><\/p>\n<p>Delicate elderflower notes present in <a href=\"https:\/\/josettasaffirio.com\/en\/wines\/\"><strong>Nebbiolo d\u2019Alba DOC Spumante Ros\u00e9<\/strong><\/a> evoke the perfume of spring meadows.<\/p>\n<\/div><div class=\"fusion-separator\" style=\"align-self: flex-start;margin-right:auto;margin-top:20px;margin-bottom:20px;width:100%;max-width:126px;\"><div class=\"fusion-separator-border sep-single sep-solid\" style=\"--awb-height:20px;--awb-amount:20px;--awb-sep-color:#be9e56;border-color:#be9e56;border-top-width:1px;\"><\/div><\/div><div class=\"fusion-text fusion-text-18\"><h4 style=\"text-align: left; line-height: 38px; color: #874c4c;\">Stimulate so you can recognise<\/h2>\n<\/div><div class=\"fusion-text fusion-text-20\"><p><strong>The subject of wine tasting has always fascinated<\/strong>, and for this reason the plethora of courses and <strong>events to refine our sense of smell have arisen<\/strong>.<br \/>\nOn all these occasions we are challenged to recognise odours, stimulate our senses and exercise our aroma memories.<\/p>\n<\/div><div class=\"fusion-text fusion-text-21\"><p>For example, we\u2019d like to remind you of the event organised by <strong><a href=\"https:\/\/josettasaffirio.com\/en\">Josetta Saffirio<\/a><\/strong> one Valentine\u2019s Day, where young couples seemed even more in love after a trying to identify the perfumes in wine during a blindfolded tasting.<br \/>\nIt was a a delightful game to repeat on other occasions and an excellent way to train the sense of smell.<\/p>\n<\/div><div class=\"fusion-text fusion-text-22\"><p><strong>Science maintains that our noses are capable of recognising 10,000 aromas, but that in fact we are hard-pressed to recognise a hundred.<\/strong><\/p>\n<\/div><div class=\"fusion-text fusion-text-23\"><p>It goes without saying that to know and distinguish the aromas of wine, <strong>we need to train and develop this capacity<\/strong>, creating a <strong>sensory memory<\/strong> through awareness and the desire to discover the odours that surround us.<\/p>\n<\/div><div class=\"fusion-text fusion-text-24\"><p>Perfumes of flowers, fruit, spices, aromatic herbs&#8230;each nuance that we are able to recognise during a tasting will give us different sensations.<br \/>\n<strong>The secret?
